Restoring Apps and Data from Time Machine to new iMac

apple replacing defective 2011 imac new model me coming week. i've been using time machine along keep apps , data backed up. periodically make redundant backups of selected data separate external hard disk. before sending one, plan again, run final time machine backup , off goes.

have never needed full restore time machine , not quite sure expect here. not sure want versus selectively restoring things, data.

thinking might nice start on fresh clean install of os x , add using regularly.

time machine restore preference files, etc. every app or restore app , creates files needs them, etc.?

can tell little confused how works , best option setting new system not have unnecessary junk old system brought on it. that's i'd avoid.
