Looking to buy a Mac Pro to upgrade

so in search desktop think ive come best option myself , buy older mac pro , upgrade comparable @ least current quad core mac pro. wondering, wanted desktop moderate power no imac have screens , mac mini outdated while dont want shell out 3 grand plus new mac pro.

question best way achieve this. have read 2009 mac pro might best not entriely sure. prefer upgrades on own , seems 2010 logic board easier work with.

planned on upgrading stock quad core kind of hex core, new gpu, ram, ssd boot drive , usb 3.0 card. of sound right , give me looking while allowing me use newer software? dont need details idea direction begin in.
 

what plan do? mean, video editing? gaming? music?
