Siri through the ear piece

so, realized apple has removed "raise talk" siri. think mistake can save thread.

how can use siri through ear piece rather speakerphone. still possible?
 

i used bluetooth ear piece last night (as brief test) , asked siri play itunes radio station. siri responded through ear piece , turned station on, music started going through phone instead of ear piece. ear piece have 4 years old , isn't capable of having music played through in fashion.
